Specialty Menus

Many times guests have certain dietary restrictions either out of preference or due to medical problems such as allergies, diabetes, Celiac disease etc.  By knowing about such restrictions ahead of time you can plan a great menu that all present will enjoy. In such times I always start with raw unprepared foods due to hidden ingredients and additives in everything.
