May Day Ladies Luncheon

The majority of adult women work outside the home leaving little time to enjoy the the pleasure of friends.  Take a little time and plan a simple May Day luncheon with make ahead menu items.

The day before

  • Boil a sufficient number of boned chicken breasts from which to prepare the chicken salad.  Add chopped green onion, pimiento, Hidden Valley Ranch dressing mix, and enough mayonnaise to bind ingredients together.  Other optional items for salad include slivered almonds, pine nuts, or walnuts, grapes, or pineapple.  Since this is to be used on a fruit plate I omit the fruit.
  • Make a plain cake.
  • Open a can of pineapple and chill to have ready to use or prepare a fresh pineapple.
  • Rinse a head of lettuce and place in plastic bag to use.
  • Set the table in preparation for guests.  Remember to have a sugar bowl on table for guests who drink sweetened tea and something in which to place an assortment of crackers.

I always like to integrate flea market finds for entertaining.  My most recent find is a set of Indiana Sandwich Glass oval hostess plates.  Other plates I have picked up include reticulated milk glass plates, and crystal plates. 



Last minute activities

  • Ice glasses.
  • Line plates with lettuce bed.
  • Cut avocadoes.
  • Peel and slice bananas.
  • Serve chicken salad
