Marinade for Chicken
4 boneless and skinless chicken breast
1/3 cup olive oil
Juice of three limes
4 cloves of garlic, peeled and minced
3 tbsp. fresh cilantro or parsley,
chopped
1/2 tsp. each of salt and freshly ground
black pepper
Red and yellow peppers, roasted,
optional
- Trim fat from chicken breast and
remove middle tendon. Pound between wax paper to flatten slightly
- Combine olive oil, lime juice, garlic and 2 tbsp. cilantro, salt
and pepper in a bowl. Pour over chicken and marinate for 1 hour.
- Grill for 2 minutes per side (or
until done). Serve on platter. Sprinkle with remaining cilantro
and serve with red and yellow peppers.
